Migaku specializes in authentic Japanese “Sushi” and “Kaiseki” cuisine, served in the traditional “Omakase” style. Grand Opening on December 23rd 2024 in Seattle, WA, by a Japanese chef, Migaku has quickly distinguished itself in the culinary world.

Chef Migaku Inaba is renowned for his profound dedication to the art of Japanese cuisine. His culinary journey began in the picturesque settings of Shizuoka, where he was deeply influenced by the rich natural resources and the culinary heritage of the region. After honing his skills at the esteemed hotel Kiyomizu, Chef Inaba received the prestigious “Minister of Agriculture, Forestry, and Fisheries Award,” a testament to his skill and innovation in the kitchen. What is Kaiseki?

Kaiseki is a structured, multi-course Japanese dinner known for its attention to detail in preparation, presentation, and only using ingredients in season.

The dinner includes various dishes, all designed to help the true flavors of nature become apparent in the ingredients and the chef’s artistic expression.

So Kaiseki meals are, perhaps, as much “art” as “food”—solidly based in the old traditions and sensibilities of Japanese culture and taste, they embody the beauty of the seasons, a sense of place, and an eye for detail that’s of a piece with Zen.

How the courses should be served is also a matter of taste and, of course, wholly depends on the time of the year and what thoughts occurred to those who worked on them.

Experience the elegance of traditional Japanese dining with Migaku Seasonal Kaiseki Course, carefully curated menu offers a delightful journey through the seasons, featuring fresh, high-quality ingredients.

This course is served at table.

Discover the art of Japanese cuisine with our Chef’s Exclusive Kaiseki Course. Each dish is crafted using the finest seasonal ingredients, beautifully presented to delight both the eyes and the palate.

This course is served at the sushi bar and the side table.

Six seats. One seating. Chef Inaba composes this course around the day’s finest arrivals — ingredients too rare, or too few, to serve across the dining room.

Served only at the sushi counter, at 7:30 PM, to six guests each evening. Reserved and prepaid through OpenTable.

$270 per guest, plus a 20% service charge and sales tax. Formerly offered as Chef’s Special.

Each piece is hand-selected by our chef to showcase the finest seasonal ingredients and the perfect harmony of flavor, texture, and presentation. This omakase journey offers a refined introduction to traditional Edomae-style sushi, enhanced by modern techniques and global inspiration. Elegantly portioned for a satisfying and memorable dining experience.

This course is served only at the table.

Service Charge Policy

We add a 20% service charge to all bills. This is not a tip. Part of the service charge is shared with staff based on our company policy. The rest is kept by the restaurant as revenue.

How to Make a Reservation at Migaku

Reservations for Migaku can be made exclusively through OpenTable. 

The courses start at 5:00 pm and 7:30 pm. To reserve your table, click or tap the button.

Chef’s Choice Kaiseki is offered at the 7:30 pm seating only, for six counter guests each evening, and is prepaid in full when you book. A 2% OpenTable booking fee applies.

We had the most unbelievable experience at Migaku. The amount of love and care we were shown was unmatched to any experience I have ever had. This is the real deal. The authenticity and complexity put into creating each bite was outstanding. The food tasted incredible and was so fresh, and put together so everything tasted like something u have never had before yet at the same time , tasted like a happy memory. The showcased so many different types of delicious fish during the nigiri tasting. Watching the chef make each role right in front of us and seeing his clear passion and craft in motion was a luxury I really won't be able to get over. And I have done many different types omakase all over the world, even in Japan, but there is nothing like this. I have never done an omakase like this ever . It's so raw and real and simple yet exquisite. The joy of eating food by the hands of someone who cherishes their craft is a privilege. It was my dad's birthday so we got lots of sake , and a sake flight, they all were delicious and paired amazingly with the food. The chef is a master. Emma our server was amazing, so knowledgeable, and considerate. We r truly lucky to have this experience in Seattle.

I’ve dined here multiple times, and each visit has been a consistently excellent experience. The atmosphere is intimate and welcoming, and the servers are always friendly, attentive, and knowledgeable without ever feeling intrusive. Chef Migaku and his team clearly put a great deal of care into creating the best possible experience with the seasonal ingredients available each day. The zensai is always one of the highlights, featuring an assortment of carefully prepared, bite-sized seasonal dishes. Each component is distinct in flavor and texture, and together they provide a thoughtful introduction to the meal and the ingredients being featured that day. The rest of the food is equally well prepared and extremely delicious, with portions that are much more substantial than many other omakase experiences. Considering both the quality and quantity of the meal, I think it offers excellent value compared with many omakase restaurants in Seattle. The chefs are also genuinely friendly and happy to explain the ingredients, preparation methods, and ideas behind each course. For anyone booking the counter experience, the interaction with the chef and service team is a major part of what makes the meal so enjoyable. There are not many restaurants in Seattle that combine this level of food, hospitality, generous portions, and personal interaction. I would highly recommend it to anyone looking for a thoughtful, approachable, and memorable omakase experience.

It was sooooo fun and yummy. The servers were so kind and knowledgeable. Everything gave me early summer vibes and I was incredibly full . The only thing I’m sad about is how I was too full when the nigiri’s came out because earlier dishes came out slowly so I got full

The food was creative, delicious, and artistically presented; the service, attentive and professional. For us, the price point means it’s reserved for special occasions, but I think it’s a perfectly reasonable value for the quality and effort that clearly goes into each dish. Would absolutely recommend to others.
