Migaku awaits 2026 and is so excited to launch our unique sushi kaiseki menu rooted in the ancient Japanese New Year’s traditions. Migaku Inaba, the chef, has lovingly assembled each dish from the best seasonal components available, many of which literally come straight from Japan, to take you on this adventure of finding balance that brings a feeling of renewal and good fortune. Our January menu recalls the festive spirit of Oshogatsu, the new year days, with auspicious red-and-white motifs, decadent seafood, and warming flavors, perfect for winter days in Seattle. The seasonal sushi kaiseki course is limited and an option to invite loved ones to enjoy the beauty of the new year.
Zensai – Appetizers
A vibrant assortment of delicate bites to awaken the palate, drawing from traditional osechi for wishes of happiness and longevity:
- Red and White Kohaku Namasu (Pickled Daikon & Carrot) – Crisp, tangy slices symbolizing celebration and purity.
- Simmered Abalone – Tender and luxurious, representing prosperity.
- Tōyama Shrimp (Boiled Shrimp) – Sweet and succulent, a classic for good fortune.
- Duck Loin Simmered in Dashi – Rich umami depths for warmth and vitality.
- Sweet Chestnut – Glazed for sweetness and health in the coming year.
- Rolled Omelet (Naruto Style) – Fluffy and lightly sweet, evoking knowledge and growth.

- Matoi Style King Salmon – Delicately cured for elegant flavor. Matoi represents the target used in Japanese archery, symbolizing a wish for fulfillment.
- Plum-shaped Carrot – Artfully carved, wishing for beauty and grace.
Sanga-yaki – Sashimi Alternative
Grilled Bluefish Sanga-yaki with Tosazu Vinegar A fragrant, lightly charred alternative to raw sashimi, balanced with refreshing Tosazu Vinegar jelly for a bright, cleansing note.
Wanmono – Clear Soup
Rolled Cabbage with Chicken Stuffed with Aromatic Vegetables Served in clear First Dashi Broth, accompanied by Crane-shaped Carrot and Rapeseed Greens. A comforting, soul-warming bowl symbolizing longevity and family harmony.
Alternative to Steamed Dish
Avocado & Chicken Egg Miso Bake Topped with creamy Mozzarella Cheese, fresh Tomato, and a sprinkle of Pink Peppercorn. An elegant fusion alternative to the traditional steamed dish, blending creamy textures with subtle warmth and a hint of spice.
Yakimono / Nimono – Grilled / Simmered Dish
A5 Wagyu Sirloin Beef Hot Pot Premium marbled beef simmered to melting tenderness, offering indulgent richness and strength for the year ahead.
